Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts

Vegetables

  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion red onion

Aromatics & Seasonings

  • 2 cloves garlic
  • Olive oil Olive oil
  • 2 tablespoons dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

Cheese

  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Garnish

  • 2 tablespoons fresh parsley for garnish

Instructions 

  • Preheat oven to 375°F (190°C). Grease a baking dish.
  • Combine chicken, zucchini, tomatoes, onion, and garlic; season with olive oil and spices.
  • Spread mixture in dish; top with cheeses.
  • Cover with foil; bake for 20 minutes. Remove foil; bake 10-15 more minutes until golden.
  • Garnish with parsley before serving.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
