A flavorful and healthy baked chicken dish with fresh vegetables and Mediterranean cheeses, perfect for a quick dinner.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (cut into bite-sized pieces)

Vegetables

  • 2 medium zucchinis (sliced into half-moons)
  • 1 cup cherry tomatoes (halved)
  • ½ red onion red onion (thinly sliced)

Aromatics & Oils

  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil

Spices & Herbs

  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional for heat)

Cheese

  • ½ cup shredded mozzarella cheese (or feta for a Mediterranean touch)
  • ¼ cup grated Parmesan cheese

Garnish

  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a baking dish.
  • Toss chicken, zucchini, tomatoes, onion, garlic, olive oil, and spices in a bowl.
  • Spread mixture in the dish, sprinkle cheeses on top.
  • Cover with foil and bake for 20 minutes, then uncover and bake 10-15 more minutes until golden.
  • Garnish with parsley and serve warm.

Notes

Use feta instead of mozzarella for an authentic Mediterranean flavor.
