Instructions
Combine marinade ingredients in a large bowl and marinate chicken for 30 minutes or overnight.
Preheat oven to 200°C (Gas Mark 6). Place chicken, vegetables, garlic, and stock in a roasting tin.
Bake covered with foil for 55 minutes. Remove from oven, add feta and olives, then bake for another 20-25 minutes.
Notes
For extra flavor, marinate the chicken longer and serve with fresh herbs.
