A flavorful and hearty one-pan dish combining tender chicken, roasted vegetables, olives, and feta for a satisfying meal.

Ingredients

Meat

  • 1 kg Chicken Thighs (Skin on)
  • 1 pcs Lemon (Juice only)
  • 6 cloves Garlic (in Skins)

Spices

  • 1 tbsp Dried Oregano
  • 1 tbsp Smoked Paprika
  • 1 tbsp Cumin Powder
  • 1 tsp Cinnamon Powder
  • 3 tbsp Olive Oil

Seasoning

  • to taste Salt and Pepper
  • 4 tbsp Chicken Stock

Vegetables

  • 1 lb Baby Potatoes (Cut in half)
  • 1 large Red Pepper (Cut into thick strips)
  • 1 large Red Onion (Cut into wedges)
  • Handful Cherry Tomatoes
  • 1 pcs Lemon (cut into wedges)
  • 200 grams Feta (Cut into large cubes)
  • 60 grams Olives

Instructions 

  • Combine marinade ingredients in a large bowl and marinate chicken for 30 minutes or overnight.
  • Preheat oven to 200°C (Gas Mark 6). Place chicken, vegetables, garlic, and stock in a roasting tin.
  • Bake covered with foil for 55 minutes. Remove from oven, add feta and olives, then bake for another 20-25 minutes.

Notes

For extra flavor, marinate the chicken longer and serve with fresh herbs.
