A quick and flavorful stir fry combining tender chicken with fresh vegetables and Mediterranean seasonings.
Ingredients

chicken breast
(cut into bite-sized pieces)
Vegetables

fresh spinach

cherry tomatoes

red bell pepper
(diced)

yellow squash
(sliced)
Aromatics & Seasonings

garlic

olive oil

teaspoon
dried oregano

red pepper flakes

(zest of 1 lemon)
Salt and Pepper
to taste

Instructions
Season chicken with salt, pepper, and half of the oregano.
Heat 2 tbsp olive oil, sear chicken 5-6 mins until golden, then set aside.
Add remaining oil, sauté garlic 30 sec, then cook bell pepper and squash 4-5 mins.
Add cherry tomatoes 2 mins, return chicken, add spinach and seasonings, cook 2-3 mins until spinach wilts.
Finish with lemon zest, adjust seasonings, serve immediately.
Notes
Use fresh ingredients for best flavor and adjust seasonings to taste.
