A quick and flavorful stir fry combining tender chicken with fresh vegetables and Mediterranean seasonings.

Ingredients

Protein

  • 1.5 pounds chicken breast (cut into bite-sized pieces)

Vegetables

  • 3 cups fresh spinach
  • 1.5 cups cherry tomatoes (halved)
  • 1 large red bell pepper (diced)
  • 1 medium yellow squash (sliced)

Aromatics & Seasonings

  • 4 cloves garlic (minced)
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 1 unit lemon (zest of 1 lemon)

Salt and Pepper

  • to taste salt and black pepper

Instructions 

  • Season chicken with salt, pepper, and half of the oregano.
  • Heat 2 tbsp olive oil, sear chicken 5-6 mins until golden, then set aside.
  • Add remaining oil, sauté garlic 30 sec, then cook bell pepper and squash 4-5 mins.
  • Add cherry tomatoes 2 mins, return chicken, add spinach and seasonings, cook 2-3 mins until spinach wilts.
  • Finish with lemon zest, adjust seasonings, serve immediately.

Notes

Use fresh ingredients for best flavor and adjust seasonings to taste.
