Delight in these tangy lemon and sweet coconut bars, perfect for a refreshing treat.
Ingredients
Dough

all-purpose flour

butter, softened

granulated sugar
Filling

grated lemon peel

fresh lemon juice

Instructions
Line pan with foil, spray with non-stick spray.
Mix flour and sugar; cut in butter until coarse crumbs. Press into pan.
Bake at 350°F (175°C) for 20 minutes.
Beat eggs, sugar, flour, lemon juice; add lemon peel and coconut. Spread over crust.
Bake 25-30 minutes until set and golden. Cool, lift, and cut into bars.
