Delight in these tangy lemon and sweet coconut bars, perfect for a refreshing treat.

Ingredients

Dough

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar

Filling

  • 2 eggs eggs
  • 2/3 cup granulated sugar
  • 2 T. all-purpose flour
  • 2 tsp. grated lemon peel
  • 3 T. fresh lemon juice
  • 1 1/2 cup sweetened flaked coconut

Instructions 

  • Line pan with foil, spray with non-stick spray.
  • Mix flour and sugar; cut in butter until coarse crumbs. Press into pan.
  • Bake at 350°F (175°C) for 20 minutes.
  • Beat eggs, sugar, flour, lemon juice; add lemon peel and coconut. Spread over crust.
  • Bake 25-30 minutes until set and golden. Cool, lift, and cut into bars.
