Ingredients

Mushrooms

  • 12 large portobello mushrooms (stems removed)
  • 1 cup spinach (chopped)
  • 0.5 cup red bell pepper (finely diced)
  • 0.25 cup red onion (finely diced)
  • 0.5 cup cream cheese (softened)
  • 0.5 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 0.25 cup grated Parmesan cheese (for topping)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sauté red onion and bell pepper in olive oil for 5 minutes until softened.
  • Add spinach and cook until wilted, then remove from heat.
  • Mix sautéed vegetables with cream cheese, mozzarella, garlic powder, oregano, salt, and pepper.
  • Stuff mushroom caps with the mixture, place on a baking sheet, sprinkle Parmesan on top, and bake for 20-25 minutes until golden.
  • Let cool slightly before serving.

Notes

For extra flavor, add a pinch of red pepper flakes or fresh herbs.
