A deliciously creamy and healthy chicken broccoli Alfredo that comes together quickly for a satisfying meal.

Ingredients

Vegetables

  • 2 cups broccoli florets

Protein

  • 2 boneless, skinless chicken breasts chicken breasts, sliced into thin strips

Pan and Cooking

  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder

Sauce

  • 1 cup low-fat milk
  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • 8 ounces fettuccine or pasta of choice

Instructions 

  • Cook pasta according to package instructions; set aside.
  • Steam broccoli until tender; set aside.
  • In a skillet, heat olive oil and cook chicken until browned and cooked through.
  • In a saucepan, melt butter, whisk in flour, then gradually add milk, garlic, and seasonings; cook until thickened.
  • Stir Parmesan cheese into sauce, then combine with cooked pasta, chicken, and broccoli. Serve warm.

Notes

For a lighter version, use skim milk and less cheese.
