Ingredients
Dried Lentils

green or brown lentils
Vegetables

carrots, diced

stalks
celery, diced

yellow onion, chopped

garlic, minced
Broth and Canned Goods

low-sodium vegetable broth

Instructions
Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery until softened.
Add lentils and stir in vegetables. Pour in broth and tomatoes; bring to a boil.
Stir in cumin, thyme, bay leaves, salt, and pepper. Reduce heat and simmer for 30-40 minutes.
Stir in greens just before serving. Serve hot.
