A hearty and nutritious soup combining lentils and fresh vegetables, perfect for a comforting meal.

Ingredients

Dried Lentils

  • 1 cup green or brown lentils

Vegetables

  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced

Broth and Canned Goods

  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes (with juice)

Greens

  • 2 cups fresh spinach or kale

Spices and Oils

  • 1 tsp cumin
  • 1 tsp dried thyme
  • Salt and pepper to taste Salt and pepper (to taste)
  • 1 tbsp olive oil

Instructions 

  • Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery until softened.
  • Add lentils and stir in vegetables. Pour in broth and tomatoes; bring to a boil.
  • Stir in cumin, thyme, bay leaves, salt, and pepper. Reduce heat and simmer for 30-40 minutes.
  • Stir in greens just before serving. Serve hot.
