Instructions
Cook lentils in 2 cups of water until tender, then drain.
Cook couscous in remaining water according to package instructions, then fluff with a fork.
Whisk together lemon juice, garlic, shallot, lemon zest, mustard, honey, salt, and pepper. Slowly add olive oil to emulsify.
In a large bowl, combine cooked lentils, couscous, red bell pepper, red onion, and thyme. Toss with lemon dressing.
Season with salt, pepper, and cumin. Serve chilled or at room temperature.
Notes
For extra flavor, let the salad sit for 30 minutes before serving.
