Lemony Couscous Lentil Salad

A vibrant and refreshing salad combining tangy lemon, hearty lentils, and fluffy couscous for a wholesome meal.

Ingredients

Dressing

  • 1/4 cup fresh lemon juice
  • 1 small garlic clove (chopped)
  • 2 teaspoons minced shallot
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/8 teaspoon salt
  • Pinch fresh ground pepper
  • 1/2 cup olive oil
  • 3 cups water (divided)
  • 1 cup lentils (brown or green - Umbrian recommended)
  • 1/2 cup pearl couscous (Israeli)
  • 1/3 cup chopped red bell pepper
  • 1/3 cup chopped red onion
  • 1 teaspoon chopped fresh thyme leaves
  • 1/2 teaspoon table salt
  • 1/4 teaspoon fresh ground pepper
  • 1/4 teaspoon ground cumin
  • 6 tablespoons lemon dressing

Instructions 

  • Cook lentils in 2 cups of water until tender, then drain.
  • Cook couscous in remaining water according to package instructions, then fluff with a fork.
  • Whisk together lemon juice, garlic, shallot, lemon zest, mustard, honey, salt, and pepper. Slowly add olive oil to emulsify.
  • In a large bowl, combine cooked lentils, couscous, red bell pepper, red onion, and thyme. Toss with lemon dressing.
  • Season with salt, pepper, and cumin. Serve chilled or at room temperature.

Notes

For extra flavor, let the salad sit for 30 minutes before serving.
