A fresh and flavorful pasta salad combining tender salmon, cherry tomatoes, and a zesty lemon pesto dressing.

Ingredients

Pasta

  • 12 oz penne (I always use Barilla for the best al dente texture)

Vegetables

  • 1 red onion red onion
  • 1 pint cherry tomatoes (halved lengthwise for easier eating)

Seasonings & Oils

  • salt salt
  • 2 tbsp olive oil
  • black pepper black pepper

Main Protein

  • 8 oz salmon (patted dry to ensure a better sear)

Dressing & Flavor

  • 1 lemon lemon juice
  • 1/2 cup pesto (prefer Filippo Berio Classic Pesto for a homemade taste)
  • fresh basil fresh basil
  • 1/3 cup parmesan (freshly grated for better melting and flavor)

Instructions 

  • Cook the penne according to package instructions until al dente, then drain and set aside.
  • Season the salmon with salt and black pepper, then sear in a hot skillet until cooked through, about 4-5 minutes per side. Flake into large pieces.
  • In a large bowl, combine cooked pasta, chopped red onion, cherry tomatoes, and torn basil.
  • In a small bowl, whisk together lemon juice, pesto, and olive oil. Pour over the pasta mixture and toss to combine.
  • Add the flaked salmon and grated parmesan, then gently toss again. Garnish with additional basil if desired.

Notes

For extra flavor, let the salad chill in the fridge for 30 minutes before serving.
