A fresh and flavorful pasta salad combining tender salmon, cherry tomatoes, and a zesty lemon pesto dressing.

Instructions
Cook the penne according to package instructions until al dente, then drain and set aside.
Season the salmon with salt and black pepper, then sear in a hot skillet until cooked through, about 4-5 minutes per side. Flake into large pieces.
In a large bowl, combine cooked pasta, chopped red onion, cherry tomatoes, and torn basil.
In a small bowl, whisk together lemon juice, pesto, and olive oil. Pour over the pasta mixture and toss to combine.
Add the flaked salmon and grated parmesan, then gently toss again. Garnish with additional basil if desired.
Notes
For extra flavor, let the salad chill in the fridge for 30 minutes before serving.
