A quick and flavorful pasta dish combining lemon, pesto, and turkey for a satisfying meal.

Ingredients

Salt

  • 2 large eggs
  • 1 each lemon zest (from one lemon)
  • 0.5 cup prepared basil pesto
  • 0.5 pound farfalle (bow tie) pasta
  • 1 tablespoon extra virgin olive oil
  • 1 cup chopped onion (about one medium onion)
  • 1 clove garlic (minced)
  • 2 cups chopped cooked turkey meat (leftover turkey thigh works great)
  • to taste freshly ground black pepper

Instructions 

  • Boil water with salt, cook pasta for 10 minutes until al dente.
  • Whisk eggs, lemon zest, and pesto in a bowl; set aside.
  • Drain pasta, reserving 1/2 cup cooking water.
  • Sauté onions in olive oil until translucent, add garlic and turkey, heat through.
  • Add pasta to pan, pour egg mixture, toss quickly, add reserved water if needed.

Notes

Adjust salt and pepper to taste, and add lemon juice for extra brightness if desired.
