Ingredients

Dry ingredients

  • 2.5 cups all-purpose flour
  • 0.5 cup sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Wet ingredients

  • 1 cup buttermilk
  • 0.5 cup butter (melted)
  • 2 large eggs eggs
  • 1 heaping tablespoon lemon zest
  • 0.25 cup fresh lemon juice
  • 1 teaspoon vanilla

Frosting

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper cups.
  • Mix dry ingredients in a bowl. Combine wet ingredients in another bowl.
  • Pour wet into dry and mix just until combined. Fill muffin cups.
  • Bake for 15-20 minutes until tops spring back. Cool before frosting.

Notes

Use fresh lemon for the best flavor and avoid overmixing the batter to keep muffins tender.
