A flavorful roasted chicken infused with fresh herbs and lemon, perfect for a comforting family dinner.

Ingredients

  • 2 tbsp unsalted butter, softened
  • 5 cloves garlic cloves (1 minced, 4 whole) (Use 1 minced for the butter, 4 whole for roasting)
  • ½ tsp minced rosemary (plus 2 sprigs)
  • ½ tsp minced thyme (plus 2 sprigs)
  • ½ tsp finely grated lemon zest
  • to taste Kosher salt and black pepper
  • 1 whole chicken (about 4 lbs)
  • 1 large onion, cut into 8 wedges
  • 1 lemon cut into 8 slices
  • 1 cup water, divided
  • ½ cup chicken stock

Instructions 

  • Preheat oven to 425°F (220°C). Mix butter, minced garlic, herbs, and lemon zest.
  • Pat chicken dry, rub herb butter under the skin and over the outside.
  • Place chicken on a rack in a pan with onion, whole garlic, lemon slices, and ½ cup water. Roast for 30 mins.
  • Flip chicken breast-side down, roast for 20 mins, then flip back and roast for another 20 mins.
  • Let chicken rest, then simmer pan juices with chicken stock to make sauce. Carve and serve with sauce.

Notes

Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving.
