A flavorful roasted chicken infused with fresh herbs and lemon, perfect for a comforting family dinner.

garlic cloves (1 minced, 4 whole)
(Use 1 minced for the butter, 4 whole for roasting)

minced rosemary
(plus 2 sprigs)

(plus 2 sprigs)

finely grated lemon zest

chicken (about 4 lbs)

onion, cut into 8 wedges

lemon
cut into 8 slices

water, divided

chicken stock
Instructions
Preheat oven to 425°F (220°C). Mix butter, minced garlic, herbs, and lemon zest.
Pat chicken dry, rub herb butter under the skin and over the outside.
Place chicken on a rack in a pan with onion, whole garlic, lemon slices, and ½ cup water. Roast for 30 mins.
Flip chicken breast-side down, roast for 20 mins, then flip back and roast for another 20 mins.
Let chicken rest, then simmer pan juices with chicken stock to make sauce. Carve and serve with sauce.
Notes
Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving.
