A flavorful and easy-to-make dish featuring tender chicken breasts marinated in lemon and herbs, served over fluffy couscous.
Ingredients

Couscous

chicken broth
(or vegetable broth)

fresh parsley, chopped

Instructions
Whisk together 2 tbsp olive oil, lemon zest, lemon juice, garlic, oregano, thyme, cumin, salt, and pepper. Marinate chicken for 30 min.
Bring broth to a boil, stir in couscous, cover, and let sit 5 min. Fluff and set aside.
Cook chicken in remaining 1 tbsp olive oil 5–7 min per side until golden and internal temp reaches 165°F.
Rest chicken 5 min, then slice into strips. Mix couscous with remaining marinade and parsley.
Serve sliced chicken over couscous, garnished with lemon wedges.
Notes
For extra flavor, add a sprinkle of feta or a drizzle of extra lemon juice before serving.
