Lemon Herb Couscous Chicken

A flavorful and easy-to-make dish featuring tender chicken breasts marinated in lemon and herbs, served over fluffy couscous.

Ingredients

Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil (divided)
  • 1 piece lemon zest
  • 1 piece lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • to taste Salt and freshly ground black pepper

Couscous

  • 1 cup couscous
  • 1.5 cups chicken broth (or vegetable broth)
  • ¼ cup fresh parsley, chopped

Garnish

  • 1 piece lemon wedges

Instructions 

  • Whisk together 2 tbsp olive oil, lemon zest, lemon juice, garlic, oregano, thyme, cumin, salt, and pepper. Marinate chicken for 30 min.
  • Bring broth to a boil, stir in couscous, cover, and let sit 5 min. Fluff and set aside.
  • Cook chicken in remaining 1 tbsp olive oil 5–7 min per side until golden and internal temp reaches 165°F.
  • Rest chicken 5 min, then slice into strips. Mix couscous with remaining marinade and parsley.
  • Serve sliced chicken over couscous, garnished with lemon wedges.

Notes

For extra flavor, add a sprinkle of feta or a drizzle of extra lemon juice before serving.
