Delightful gluten-free cookies with a zesty lemon flavor and a tender almond base.

Ingredients

dry ingredients

  • 3 cups almond flour
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp salt

wet ingredients

  • 1 stick butter ((4 oz))
  • 1 cup granulated sugar
  • 1 egg egg
  • 3 Tbsp fresh lemon juice
  • 1 Tbsp lemon zest
  • 1 tsp pure vanilla extract
  • 2 Tbsp fresh lemon juice
  • 2 tsp lemon zest
  • 1 cup confectioners sugar

Instructions 

  • Preheat oven to 350°F (175°C). Mix dry ingredients and set aside.
  • Cream butter and sugar, then add egg, vanilla, lemon juice, and zest.
  • Gradually mix in dry ingredients. Form dough into 1 Tbsp balls and place on baking sheet.
  • Bake for 13-15 minutes until golden. Cool before optional glazing.
  • For glaze, whisk lemon juice, zest, and confectioners sugar; dip cooled cookies.
