Delightful gluten-free cookies with a zesty lemon flavor and a tender almond base.

Instructions
Preheat oven to 350°F (175°C). Mix dry ingredients and set aside.
Cream butter and sugar, then add egg, vanilla, lemon juice, and zest.
Gradually mix in dry ingredients. Form dough into 1 Tbsp balls and place on baking sheet.
Bake for 13-15 minutes until golden. Cool before optional glazing.
For glaze, whisk lemon juice, zest, and confectioners sugar; dip cooled cookies.
