A quick and flavorful Korean-inspired rice bowl featuring savory ground turkey and fresh vegetables.

Ingredients

Meat

  • 1 lb ground turkey

Grains

  • 3 cups cooked white rice

Sauces & Condiments

  • 2 tbsp gochujang (Korean chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil

Vegetables

  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 2 green onions sliced green onions

Garnishes

  • 1 tbsp sesame seeds
  • 2 tsp rice vinegar
  • 1 tbsp vegetable oil

Instructions 

  • Whisk gochujang, soy sauce, honey, sesame oil, garlic, and ginger to make the sauce.
  • Cook turkey in vegetable oil until no pink, about 5-6 minutes.
  • Add sauce to turkey, cook 2 more minutes until glossy.
  • Toss cucumber slices with rice vinegar; let sit 5 minutes.
  • Divide rice into bowls, top with turkey, carrots, cucumbers, green onions, and garnish with sesame seeds.
  • Serve immediately with extra gochujang if desired.

Notes

For extra spice, add more gochujang on the side.
