A low-carb, cheesy zucchini boat recipe packed with savory meat and rich cheeses, perfect for a healthy dinner.
Ingredients

zucchini
(halved and scooped)

mozzarella cheese

ricotta cheese

Instructions
Preheat oven to 375°F (190°C).
Mix ricotta, parmesan, egg yolk, oregano, and set aside.
Cut zucchini in half lengthwise, scoop out centers, brush with olive oil, and bake 10 minutes.
Cook beef with garlic, drain fat, stir in 1½ cups sauce and Italian seasoning, simmer 5 minutes.
Fill zucchini shells with cheese mixture, top with meat, cover with foil, and bake 30 minutes. Add mozzarella and bake 5 more minutes.
Notes
For extra flavor, sprinkle fresh basil before serving.
