A low-carb, cheesy zucchini boat recipe packed with savory meat and rich cheeses, perfect for a healthy dinner.

Ingredients

Vegetables

  • 2 large zucchini (halved and scooped)
  • 2 cloves garlic (minced)
  • ½ lb lean ground beef
  • 1 teaspoon Italian seasoning
  • 2 cups pasta sauce (divided)
  • 1 cup mozzarella cheese
  • 1 cup ricotta cheese
  • 2 Tablespoons grated parmesan cheese
  • 1 egg yolk egg yolk
  • ¼ teaspoon oregano

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix ricotta, parmesan, egg yolk, oregano, and set aside.
  • Cut zucchini in half lengthwise, scoop out centers, brush with olive oil, and bake 10 minutes.
  • Cook beef with garlic, drain fat, stir in 1½ cups sauce and Italian seasoning, simmer 5 minutes.
  • Fill zucchini shells with cheese mixture, top with meat, cover with foil, and bake 30 minutes. Add mozzarella and bake 5 more minutes.

Notes

For extra flavor, sprinkle fresh basil before serving.
