Ingredients

Chicken

  • 4 pieces medium chicken breasts (about 2 pounds total)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon chili powder ((optional))
  • 1 1/2 teaspoons kosher salt (or to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or avocado oil

Instructions 

  • Preheat oven to 425°F (220°C) and lightly grease a baking dish.
  • Pound the thickest part of each chicken breast to even thickness or cut in half horizontally.
  • Toss chicken with spices and oil until coated. Arrange in baking dish.
  • Bake for 18-20 minutes until internal temperature reaches 165°F (74°C).
  • Rest for a few minutes, then slice and serve.
