Hot Honey Beef and Butternut Squash Bowls

A flavorful and hearty bowl combining roasted butternut squash, crispy broccoli, seasoned ground beef, and a spicy honey sauce for a satisfying meal.

Ingredients

Vegetables

  • 1 medium butternut squash, finely diced
  • 2 cups broccoli florets
  • 2 tsp olive oil (1 tsp per tray)
  • Salt and pepper Salt and pepper
  • 2 tsp oregano (1 tsp per tray)
  • 2 tsp smoked paprika (1 tsp per tray)
  • 2 tsp chili lime seasoning or Tajín (1 tsp per tray)

Ground Beef

  • 1 lb lean ground beef (93/7)
  • 1 tsp olive oil
  • Salt and pepper Salt and pepper
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp oregano
  • 1.5 tbsp smoked paprika
  • 1/4 tsp cayenne pepper

Sauce

  • 5 tbsp sugar-free honey (or regular)
  • 2 tbsp sriracha
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1/2 to 1 tsp red chili flakes

Instructions 

  • Preheat oven to 400°F (200°C). Dice butternut squash and toss with 1 tsp olive oil, salt, pepper, 1 tsp oregano, 1 tsp smoked paprika, and 1 tsp chili lime seasoning. Roast for 27-30 minutes.
  • On a separate tray, toss broccoli with the same oil and seasonings. Roast until crispy and charred.
  • Cook ground beef in a skillet with 1 tsp olive oil, salt, pepper, onion powder, garlic powder, oregano, smoked paprika, and cayenne until browned, about 15-17 minutes.
  • Make the sauce by combining honey, sriracha, rice vinegar, soy sauce, and chili flakes in a pan over low heat until smooth.
  • Assemble bowls by dividing roasted veggies, adding 4 oz beef, cubed avocado, Greek yogurt, and drizzling with hot honey sauce.

Notes

For extra flavor, sprinkle fresh herbs or additional chili flakes before serving.
