Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 4 boneless, skinless chicken breasts chicken breasts
  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Fresh Parsley

  • to taste chopped parsley

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with oil, salt, pepper, and paprika; roast for 20-25 minutes.
  • Mix honey, garlic, soy sauce, and red pepper flakes. Season chicken with salt and pepper. Sauté onions, then cook chicken until golden.
  • Pour sauce over chicken and onions. Add roasted sweet potatoes, then bake for 12-15 minutes until cooked through.
  • Garnish with chopped parsley and serve warm.

Notes

For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking.
