Ingredients

Dry Ingredients

  • 3 cups Gluten Free Oats (use certified gluten-free oats if necessary)
  • 0.75 cup Nuts and Seeds (walnuts, pecans, almonds, pumpkin seeds, sunflower seeds)
  • 0.33 cup Dried Cranberries or Cherries
  • 0.33 cup Dark Chocolate Chips

Wet Ingredients

  • 0.33 cup Pure Maple Syrup
  • 0.33 cup Coconut Oil (melted)
  • 1 tsp Pure Vanilla Extract
  • 2 tsp Ground Cinnamon
  • 0.5 tsp Salt
  • 2 tbsp Chia Seeds or Flax Seeds (optional)

Instructions 

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Mix oats, nuts/seeds, cinnamon, and salt in a large bowl.
  • Whisk melted coconut oil, maple syrup, and vanilla; pour over dry ingredients and stir to coat.
  • Spread mixture evenly on prepared baking sheet and bake for 30 minutes, stirring halfway.
  • Cool completely, then add dried fruit and chocolate chips if desired.

Notes

Store in an airtight container for up to two weeks for maximum freshness.
