Ingredients

Dough

  • 8 ounces finely grated sharp cheddar cheese
  • 1 1/4 cups all purpose flour (160g)
  • 4 tablespoons cold unsalted butter (cut into small pieces)
  • 1/4 cup plain yogurt (see note)

Instructions

  • Pulse cheddar, flour, and butter in a food processor until coarse crumbs form. Add yogurt and pulse until dough holds together.
  • Shape dough into a log, wrap in plastic, and refrigerate for at least 30 minutes.
  • Preheat oven to 350°F (175°C). Roll out chilled dough on floured surface to 1/8-1/4 inch thickness. Cut into 1-inch squares and transfer to parchment-lined baking sheet.
  • Use a skewer or chopstick to poke a hole in the center of each cracker. Bake for 17-20 minutes until golden and puffy.
  • Cool completely before serving. Enjoy!

Notes

Chilling the dough makes it easier to roll out and cut.
