These hearty, protein-packed pumpkin bagels are perfect for a nutritious breakfast or snack, combining warm spices with wholesome ingredients.

Ingredients

Wet ingredients

  • 1 cup cups 2% or whole-milk plain Greek yogurt (do not use regular yogurt)
  • ¾ cup cups pumpkin puree
  • 2 tablespoons tablespoons honey (or pure maple syrup)

Dry ingredients

  • 1 ⅓ cups cups all purpose flour (plus more for dusting)
  • 1 cup cups white whole wheat flour (or whole wheat flour)
  • 2 tablespoons tablespoons flaxseed meal
  • 1 tablespoon tablespoon baking powder
  • 2 teaspoons teaspoons pumpkin pie spice
  • 1 teaspoon teaspoon ground cinnamon
  • ¾ teaspoon teaspoon kosher salt

Optional mix-ins

  • ½ cup cups raisins or dried cranberries

Topping

  • 1 large each egg (lightly beaten for brushing)

Instructions 

  • Preheat oven to 375°F and line a baking sheet with parchment.
  • Mix yogurt, pumpkin, and honey until combined. Add dry ingredients and mix until a sticky dough forms.
  • Divide dough into 8 balls, roll into ropes, join ends to form bagels, and place on sheet.
  • Brush bagels with beaten egg and bake for 20-25 minutes until golden. Cool before serving.

Notes

For a softer crust, store in an airtight container. Toast before eating for best texture.
