Ingredients

Protein

  • 3 cups shredded rotisserie chicken (pulled by hand)
  • 2 stalks celery (finely diced)
  • 3 Persian cucumbers (finely diced)
  • 0.5 small red onion (finely diced)
  • 3 green green onions (thinly sliced)
  • 4 oz arugula (chopped)
  • 4 tbsp fresh mint (torn)
  • 0.5 cup plain Greek yogurt
  • 2-3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 3 tbsp pickle juice
  • 0.5 tsp garlic powder
  • 0.5 tsp dried oregano
  • to taste salt
  • to taste fresh cracked pepper
  • 0.5 tbsp olive oil

Instructions 

  • Add chicken and vegetables to a bowl, toss lightly.
  • Whisk together yogurt, mayonnaise, mustard, pickle juice, garlic powder, oregano, olive oil, salt, and pepper.
  • Pour dressing over the chicken mixture and fold gently until coated.
  • Adjust seasoning if needed, then garnish with mint and arugula.
  • Serve in lettuce cups, wraps, or with your favorite bread or crackers.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
