A nutritious and protein-packed breakfast burrito loaded with fresh vegetables and optional cheese, perfect for a quick morning meal.
Ingredients
Eggs

liquid egg whites
Vegetables

baby spinach
0.25
cup
diced bell peppers

cup
diced onions
Tortilla

soft taco-sized tortilla

shredded cheese (optional)
Instructions
Scramble the egg and egg whites in a bowl; set aside.
Sprinkle half of the cheese on the tortilla and set aside.
Sauté peppers and onions until soft, then add spinach until wilted. Spread over cheese on tortilla.
Cook eggs in the pan, scramble until done, then add to vegetables on the tortilla. Top with remaining cheese.
Fold in sides and roll up the burrito to serve.
Notes
Feel free to add hot sauce or salsa for extra flavor.
