Ingredients

Dry Ingredients

  • 1.5 cups rolled oats
  • 0.5 cup vanilla protein powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 0.25 cup maple syrup or honey
  • 0.25 cup milk any kind
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup fresh or frozen blueberries
  • 2 tablespoons oats for topping optional

Instructions 

  • Preheat oven to 180°C (350°F) and prepare a muffin tin.
  • Mix dry ingredients in a large bowl; whisk wet ingredients in a separate bowl.
  • Combine wet and dry ingredients; fold in blueberries.
  • Divide batter into muffin cups; sprinkle oats on top if desired.
  • Bake for 20-25 minutes; cool before storing.
