A nutritious and delicious apple crumble packed with extra protein, perfect for a healthy dessert or snack.

Ingredients

Dairy and Protein Mixture

  • 1 cup full-fat small curd cottage cheese (blended smooth)
  • 0.5 cup plain full-fat Greek yogurt
  • 0.33 cup vanilla whey protein powder (optional but recommended)

Dry Ingredients

  • 0.5 cup almond flour
  • 0.75 cup rolled oats
  • 1 teaspoon baking powder

Apple Mixture

  • 4 medium apples (peeled, cored, and sliced, mix of Granny Smith and Honeycrisp)
  • 0.25 cup butter (melted)
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish or line with parchment paper.
  • Blend cottage cheese until smooth. Peel, core, and slice apples; toss with cinnamon, nutmeg, and maple syrup.
  • Mix almond flour, oats, baking powder, and protein powder. In a separate bowl, combine cottage cheese mixture, Greek yogurt, melted butter, and vanilla.
  • Fold dry ingredients into wet mixture gently. Spread apple mixture in baking dish, top with crumble, and bake for 40-45 minutes.
  • Cool for 10 minutes before serving to set the topping.

Notes

For extra flavor, add a handful of chopped nuts on top before baking.
