Ingredients
Dairy and Protein Mixture
1cupfull-fat small curd cottage cheese(blended smooth)
0.5cupplain full-fat Greek yogurt
0.33cupvanilla whey protein powder(optional but recommended)
Dry Ingredients
0.5cupalmond flour
0.75cuprolled oats
1teaspoonbaking powder
Apple Mixture
4mediumapples(peeled, cored, and sliced, mix of Granny Smith and Honeycrisp)
0.25cupbutter(melted)
2tablespoonsmaple syrup
1teaspooncinnamon
0.5teaspoonnutmeg
1teaspoonvanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish or line with parchment paper.
Blend cottage cheese until smooth. Peel, core, and slice apples; toss with cinnamon, nutmeg, and maple syrup.
Mix almond flour, oats, baking powder, and protein powder. In a separate bowl, combine cottage cheese mixture, Greek yogurt, melted butter, and vanilla.
Fold dry ingredients into wet mixture gently. Spread apple mixture in baking dish, top with crumble, and bake for 40-45 minutes.
Cool for 10 minutes before serving to set the topping.
Notes
For extra flavor, add a handful of chopped nuts on top before baking.
