A flavorful baked dish combining tender herb-seasoned chicken with roasted mixed vegetables, perfect for a wholesome meal.

Ingredients

Protein

  • 3-4 pieces boneless, skinless chicken breasts

Seasonings

  • 3 cloves fresh garlic, minced
  • 2 tbsp olive oil

Vegetables

  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried rosemary

Salt and Pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Arrange chicken in a greased baking dish and mix olive oil, garlic, herbs, salt, and pepper; pour over chicken.
  • Slice vegetables, toss with olive oil and herbs, then arrange around chicken.
  • Bake for 30-35 minutes until chicken is golden and veggies are tender.
  • Serve hot, drizzling with any leftover herb oil.
