A flavorful and healthy turkey chili perfect for cozy nights, packed with vegetables and beans for a satisfying meal.

Ingredients

Vegetables

  • 1 piece red bell pepper, diced
  • 1 piece yellow onion, diced

Canned Goods

  • 1 cup canned or frozen sweet corn
  • 1 can diced or crushed tomatoes (14.5 oz)
  • 2 cans red kidney beans, rinsed and drained (15 oz each)

Meat & Broth

  • 1 pound extra-lean ground turkey (99% lean)
  • 1 cup chicken broth (reduce to 1/2 cup if using slow cooker)
  • 2 tablespoons mild chili powder (adjust to taste)
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • a pinch optional cayenne pepper (adjust for heat preference)
  • to taste salt
  • 1 tablespoon olive oil (optional) (for browning turkey if dry)

Instructions 

  • Rinse and drain the kidney beans.
  • Dice the onion and bell pepper. Brown turkey and onions in a large pot, adding olive oil if needed. Add remaining ingredients and stir.
  • For slow cooker: cook on high 3–4 hours or low 6–7 hours. For stovetop: simmer uncovered 30–45 minutes until thick.
  • Mash some beans for creaminess if desired. Adjust seasoning and add lime or tomato paste for brightness.

Notes

Adjust spice levels to your preference and serve with your favorite toppings.
