red bell pepper, diced

yellow onion, diced
Canned Goods

canned or frozen sweet corn

diced or crushed tomatoes (14.5 oz)

red kidney beans, rinsed and drained (15 oz each)
Meat & Broth

extra-lean ground turkey (99% lean)

cup
chicken broth
(reduce to 1/2 cup if using slow cooker)

tablespoons
mild chili powder
(adjust to taste)

teaspoon
cumin
1
teaspoon
dried oregano
a pinch
optional
cayenne pepper
(adjust for heat preference)

olive oil (optional)
(for browning turkey if dry)
Instructions
Rinse and drain the kidney beans.
Dice the onion and bell pepper. Brown turkey and onions in a large pot, adding olive oil if needed. Add remaining ingredients and stir.
For slow cooker: cook on high 3–4 hours or low 6–7 hours. For stovetop: simmer uncovered 30–45 minutes until thick.
Mash some beans for creaminess if desired. Adjust seasoning and add lime or tomato paste for brightness.
