A comforting and easy one-pot chicken stew perfect for family dinners. Loaded with vegetables and rich flavors, it’s a complete meal in one pot.

Ingredients

Protein

  • 1 lb boneless chicken thighs or breasts, cut into chunks

Oil

  • 2 tbsp olive oil

Vegetables

  • 1 unit onion, diced
  • 2 units carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced

Broth & Potatoes

  • 3 cups chicken broth
  • 1 cup chopped potatoes (optional)

Green Vegetables

  • 1 cup green beans or peas

Seasonings

  • 1 tsp dried thyme
  • Salt and pepper to taste Salt and pepper

Thickening slurry (optional)

  • 1 tbsp cornstarch + 2 tbsp water (for thickening)

Instructions 

  • Season chicken with salt and pepper.
  • Heat oil, sear chicken until browned, then remove.
  • Sauté onion, carrots, and celery until soft. Add garlic and thyme; cook briefly.
  • Return chicken, add broth, and simmer. Add potatoes; cook 25 mins.
  • Add green beans, cook 10 mins. Stir in slurry if desired. Adjust seasoning and serve.

Notes

For a thicker stew, add the cornstarch slurry during the last few minutes of cooking.
