Hearty Lentil and Potato Soup

A comforting and nutritious soup combining lentils, potatoes, and vegetables, perfect for a wholesome meal.

Ingredients

Oil

  • 2 tbsp olive oil

Vegetables

  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 2 large carrots (diced)
  • 2 stalks celery (diced)

Legumes

  • 1.5 cups dried green or brown lentils (rinsed)
  • 3 medium potatoes (diced)
  • 1 can diced tomatoes (14.5 oz)

Broth

  • 8 cups vegetable broth

Spices

  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp dried rosemary
  • to taste Salt and black pepper

Greens

  • 2 cups fresh spinach or kale (optional)

Garnish

  • as needed Fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a large pot, then cook diced onion, carrots, and celery for 5 minutes.
  • Add minced garlic and cook for 1 minute.
  • Stir in lentils, potatoes, tomatoes, broth, and spices. Bring to a boil, then simmer for 30–40 minutes.
  • In the last 5 minutes, add greens if desired. Taste and adjust seasoning. Serve hot with parsley.

Notes

This soup is easy to customize with your favorite greens or spices.
