Instructions
Heat olive oil in a large pot, then cook diced onion, carrots, and celery for 5 minutes.
Add minced garlic and cook for 1 minute.
Stir in lentils, potatoes, tomatoes, broth, and spices. Bring to a boil, then simmer for 30–40 minutes.
In the last 5 minutes, add greens if desired. Taste and adjust seasoning. Serve hot with parsley.
