2lbsrusset or Yukon gold potatoes, peeled and quartered
1/4cupunsweetened Greek yogurt or low-fat cottage cheese
1scoopunflavored protein powder (whey or plant-based)
3tbspbutter
1/4cupwarm milk (dairy or plant-based)
2tbspfresh chives or parsley, chopped (for garnish)
Instructions
Sauté diced onions, carrots, and celery in olive oil until softened (~6 min). Add garlic and cook 1 min.
Add ground turkey; cook until no longer pink (~8 min). Stir in tomato paste, herbs, spices, and broth; simmer 10 min. Mix in peas in last 3 min.
Boil potatoes until tender (~15-20 min). Drain, then mash with butter, warm milk, Greek yogurt, and protein powder. Season to taste.
Preheat oven to 375°F (190°C). Spread filling in a baking dish, top with mashed potatoes, and create textured ridges with a fork.
Bake for 25-30 min until bubbling and golden. Broil 2-3 min for crispiness. Cool 10 min, garnish, and serve.
Notes
For extra flavor, add a dash of Worcestershire sauce or hot sauce to the filling.
