Ingredients

Dry ingredients

  • 1 ¼ cups old-fashioned rolled oats
  • 1 ¼ cups white whole wheat flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet ingredients

  • 1 cup Greek yogurt
  • ¼ cup milk
  • 2 large eggs
  • 1 ½ teaspoons vanilla
  • ½ cup honey
  • 1/3 cup melted coconut oil
  • 2 cups blueberries

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8x8 inch pan or line with parchment.
  • Mix dry ingredients: oats, flour, baking powder, baking soda, and salt.
  • Whisk together yogurt, milk, eggs, vanilla, honey, and melted coconut oil.
  • Combine wet and dry ingredients; fold in blueberries. Pour into prepared pan.
  • Bake for 45-55 minutes until a toothpick comes out clean. Cool before serving.
