Ingredients

Eggs

  • 3 large eggs

Vegetables

  • 0.5 cup fresh spinach, chopped
  • 0.25 cup mushrooms, sliced
  • 0.25 cup bell peppers, diced

Other

  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • for garnish Fresh herbs (optional)

Instructions 

  • Chop vegetables and whisk eggs with salt and pepper.
  • Heat olive oil in a skillet, sauté vegetables for 3-4 minutes.
  • Pour eggs into skillet, cook until edges set.
  • Fold omelette in half, cook for 1 minute until fully set.
  • Slide onto plate, garnish with herbs, serve.
