lemon juice (optional, but highly recommended)

Instructions
Preheat oven to 350ºF (175ºC) and line muffin pan with liners.
Mix milk and lemon juice; set aside.
Whisk flour and baking powder; set aside.
Cream butter and sugar until fluffy. Add yogurt, egg, and egg white; mix well.
Stir in vanilla and milk mixture. Gradually add flour mixture; mix until just combined.
Fill liners 1/2 to 2/3 full. Bake for 20 minutes until golden and a toothpick comes out clean. Cool before icing.
Notes
Ensure not to over-mix the batter to keep cupcakes light and fluffy.
