Enjoy these wholesome, fruity oatmeal bars that are perfect for a quick snack or breakfast. They combine fresh strawberries with a crunchy oat topping for a delicious treat.

Ingredients

Dough and topping

  • 1 cup old-fashioned rolled oats
  • 3/4 cup white whole wheat flour
  • 1/3 cup light brown sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon kosher salt
  • 6 tablespoons unsalted butter, melted (or melted coconut oil for vegan/dairy free)

Filling

  • 2 cups small-diced strawberries (about 10 ounces, divided)
  • 1 teaspoon cornstarch
  • 1 tablespoon freshly squeezed lemon juice (from about 1/2 small lemon)
  • 1 tablespoon granulated sugar (divided)
  • 1/2 cup powdered sugar (sifted)
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon milk (any kind)

Instructions 

  • Preheat oven to 375°F (190°C) and line an 8x8-inch pan with parchment paper.
  • Mix oats, flour, brown sugar, ginger, and salt. Add melted butter and press half into the pan as a crust.
  • Spread half of the strawberries over the crust, sprinkle cornstarch, lemon juice, and half of the sugar. Add remaining strawberries and sugar on top.
  • Sprinkle reserved crumble mixture over the strawberries and bake for 35-40 minutes until bubbly and golden.
  • Cool completely, then whisk powdered sugar, vanilla, and milk to make glaze. Drizzle over bars, slice into 16 pieces, and serve.

Notes

For a vegan version, substitute melted coconut oil for butter.
