These wholesome strawberry oatmeal bars are a delicious and nutritious treat, perfect for breakfast or a snack. Packed with fresh fruit and wholesome ingredients, they are easy to make and naturally sweetened.

Ingredients

Dough and Crumble

  • 1 cup old-fashioned rolled oats
  • 3/4 cup white whole wheat flour
  • 1/3 cup light brown sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon kosher salt
  • 6 tablespoons unsalted butter (melted) (or melted coconut oil for vegan/dairy free)

Filling

  • 2 cups small-diced strawberries (about 10 ounces, divided)
  • 1 teaspoon cornstarch
  • 1 tablespoon freshly squeezed lemon juice (from about 1/2 small lemon)
  • 1 tablespoon granulated sugar (divided)
  • 1/2 cup powdered sugar (sifted)
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon milk (any kind)

Instructions 

  • Preheat oven to 375°F (190°C). Line an 8x8-inch pan with parchment paper.
  • Mix oats, flour, brown sugar, ginger, and salt. Add melted butter and combine. Reserve 1/2 cup of crumble, press the rest into the pan.
  • Spread half of the strawberries over crust. Sprinkle cornstarch, lemon juice, and 1/2 tbsp sugar. Add remaining berries and sugar. Top with reserved crumble.
  • Bake for 35-40 minutes until bubbly and golden. Cool completely on a wire rack.
  • Whisk powdered sugar, vanilla, and milk to make glaze. Drizzle over cooled bars, slice, and serve.

Notes

For a vegan version, substitute melted coconut oil for butter.
