These wholesome strawberry oatmeal bars are a delicious and nutritious treat, perfect for breakfast or a snack. Packed with fresh fruit and wholesome ingredients, they are easy to make and naturally sweetened.

Dough and Crumble
1cupold-fashioned rolled oats
3/4cupwhite whole wheat flour
1/3cuplight brown sugar
1/4teaspoonground ginger
1/4teaspoonkosher salt
6tablespoonsunsalted butter (melted)(or melted coconut oil for vegan/dairy free)
1tablespoonfreshly squeezed lemon juice(from about 1/2 small lemon)
1tablespoongranulated sugar(divided)
1/2cuppowdered sugar(sifted)
1/2teaspoonpure vanilla extract
1tablespoonmilk(any kind)
Instructions
Preheat oven to 375°F (190°C). Line an 8x8-inch pan with parchment paper.
Mix oats, flour, brown sugar, ginger, and salt. Add melted butter and combine. Reserve 1/2 cup of crumble, press the rest into the pan.
Spread half of the strawberries over crust. Sprinkle cornstarch, lemon juice, and 1/2 tbsp sugar. Add remaining berries and sugar. Top with reserved crumble.
Bake for 35-40 minutes until bubbly and golden. Cool completely on a wire rack.
Whisk powdered sugar, vanilla, and milk to make glaze. Drizzle over cooled bars, slice, and serve.
Notes
For a vegan version, substitute melted coconut oil for butter.
