A nutritious twist on the classic shepherd's pie, packed with vegetables and lean beef, baked to perfection.

Ingredients

Potatoes and Cauliflower

  • 3 pieces russet potatoes (peeled and quartered)
  • 1 head cauliflower (cut into florets)
  • 0.5 cup milk
  • 0.25 cup butter (unsalted)
  • 0.5 cup shredded parmesan
  • 1.5 teaspoon garlic powder
  • 1.5 teaspoon onion powder
  • 1 teaspoon salt

Vegetables

  • 1 tablespoon olive oil
  • 1 yellow onion yellow onion (finely diced)
  • 8 oz cremini mushrooms (minced)
  • 1 peeled and finely diced carrot
  • 1 pound ground beef (lean)

Sauce and Broth

  • 1 cup beef broth
  • 2.5 tablespoons tomato paste
  • 1.5 tablespoons Worcestershire sauce
  • 2 teaspoons fresh rosemary (chopped)
  • 1 cup frozen peas

Instructions 

  • Preheat oven to 400°F (200°C). Bring a pot of salted water to a boil, cook potatoes for 10 minutes, add cauliflower and cook until tender. Drain and mash with milk, butter, parmesan, garlic powder, onion powder, and salt.
  • Heat olive oil in a large oven-safe skillet. Sauté diced onions with salt for 2 minutes, add mushrooms and cook for 7-8 minutes, then add carrots and cook for 2 minutes.
  • Add ground beef with salt, garlic powder, and onion powder; brown for 5 minutes. Stir in beef broth, tomato paste, Worcestershire sauce, and rosemary; simmer 8-10 minutes. Mix in frozen peas.
  • Spoon mashed potatoes and cauliflower over the beef mixture, spreading evenly. Bake for 25-30 minutes until golden. Rest for 5-10 minutes before serving.

Notes

For a creamier topping, add a splash of extra milk or butter before mashing.
