A creamy and wholesome rice pudding made with plant-based ingredients, perfect for a comforting dessert or snack.

cooked white rice (jasmine or basmati)
Liquid

unsweetened plant-based milk

plant-based heavy cream alternative

Instructions
Combine plant-based milk, heavy cream, maple syrup, vanilla, cinnamon, and salt in a saucepan. Heat over medium, whisking until warm.
Stir in the cooked rice and reduce heat to low. Cook for 10-12 minutes, stirring often.
Once thickened, remove from heat and stir in lemon zest and raisins or dates.
Let cool slightly before serving warm or refrigerate for a chilled dessert.
Notes
For extra flavor, add a pinch of nutmeg or cardamom.
