A creamy and wholesome rice pudding made with plant-based ingredients, perfect for a comforting dessert or snack.

Ingredients

Rice

  • 2 cups cooked white rice (jasmine or basmati)

Liquid

  • 2 cups unsweetened plant-based milk
  • 0.5 cup plant-based heavy cream alternative

Sweetener

  • 0.25 cup maple syrup or agave nectar

Flavorings & Spices

  • 1 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon salt
  • 1 piece lemon zest of 1/2 lemon

Add-ins

  • 0.25 cup raisins or chopped dates

Instructions 

  • Combine plant-based milk, heavy cream, maple syrup, vanilla, cinnamon, and salt in a saucepan. Heat over medium, whisking until warm.
  • Stir in the cooked rice and reduce heat to low. Cook for 10-12 minutes, stirring often.
  • Once thickened, remove from heat and stir in lemon zest and raisins or dates.
  • Let cool slightly before serving warm or refrigerate for a chilled dessert.

Notes

For extra flavor, add a pinch of nutmeg or cardamom.
