A delicious and healthier take on the classic red velvet cake, perfect for special occasions or everyday indulgence.

Ingredients

Dry ingredients

  • 2 cups oat, whole wheat, or almond flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder

Wet ingredients

  • 2 eggs eggs
  • 2 cups erythritol or 4 tablespoons of sweetener
  • ½ cup oil
  • ½ cup almond milk or any milk of choice
  • 1 teaspoon vanilla essence
  • 1 tablespoon white vinegar
  • 1 teaspoon red food coloring
  • 200 g Greek yogurt or cream cheese
  • to taste Sweetener (for frosting)
  • a few drops vanilla extract
  • 1 orange Zest of 1 orange (optional)

Instructions 

  • Mix the dry ingredients: flour, erythritol or sweetener, and cocoa powder.
  • Add eggs, oil, vanilla, vinegar, and milk; beat until smooth.
  • Divide batter into three parts and bake at 356°F (180°C) for 15 minutes each, or bake all at once for 40-50 minutes, then cut into three layers.
  • Prepare frosting by combining yogurt/cream cheese with sweetener and vanilla extract.
  • Assemble the cake with layers and frosting, then chill before serving.

Notes

Chill the cake before serving for best results.
