Ingredients

Dry ingredients

  • 1 cup gluten free rolled oats
  • 1/2 cup almond milk
  • 1/3 cup pumpkin puree
  • 1 egg egg
  • 2 tbsp honey
  • 1 tbsp coconut oil, melted
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Optional toppings

  • handful crushed walnuts crushed walnuts (optional)

Instructions 

  • Blend all ingredients (except walnuts) until smooth.
  • Let batter rest for 3-5 minutes.
  • Cook 1/4 cup batter on a skillet until bubbles form, then flip and cook until golden.

Notes

For extra flavor, top with crushed walnuts before serving.
