A wholesome and flavorful pumpkin bread packed with oats and spices, perfect for a nutritious snack or breakfast.

Ingredients

Wet ingredients

  • 1 cup pumpkin puree (canned is best)
  • 0.5 cup unsweetened applesauce
  • 2/3 cup brown sugar
  • 2 eggs eggs
  • 1 tsp vanilla extract
  • 1/4 cup vegetable oil

Dry ingredients

  • 1.5 cup all purpose flour
  • 1/2 cup rolled oats (plus a few for sprinkling)
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/2 tsp powdered ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp sea salt
  • 1/4 cup raw pumpkin seeds (for sprinkling before baking)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf tin and line with parchment paper.
  • Mix pumpkin, applesauce, sugar, eggs, vanilla, and oil until combined.
  • Add flour, oats, baking soda, salt, and spices. Fold until just combined.
  • Spoon batter into the prepared loaf pan. Sprinkle oats and pumpkin seeds on top.
  • Bake for 50-55 minutes until a toothpick comes out clean. Cool before slicing.
