Instructions
Preheat oven to 350ºF (175ºC) and line a 12-cup muffin tin with liners.
Whisk together pumpkin, eggs, maple syrup, oil, and vanilla in a large bowl.
Mix dry ingredients in a separate bowl, then combine with wet ingredients and fold in chocolate chips.
Divide batter evenly into muffin tins, sprinkle extra chocolate chips if desired, and bake for 24-27 minutes.
Cool muffins in the pan briefly, then transfer to a wire rack to cool completely.
Notes
For extra flavor, sprinkle additional chocolate chips on top before baking.
