A wholesome and delicious cake combining oats and fresh apples, perfect for a healthy snack or breakfast.

Ingredients

Dry ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/3 cup brown sugar ((or coconut sugar))
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking powder

Wet ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk ((regular, almond, or oat milk))
  • 2 large eggs
  • 1 teaspoon vanilla extract

Optional nuts

  • 1/4 cup chopped walnuts or pecans ((optional))

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a 9-inch pan.
  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients in a separate bowl.
  • Combine wet and dry, then fold in apples and nuts.
  • Pour batter into pan and bake for 35-40 minutes.
  • Cool before serving.

Notes

For added flavor, sprinkle with a little cinnamon before baking.
