Instructions
Preheat oven to 350°F (175°C). Line muffin tin with liners and spray with cooking spray.
Whisk eggs, maple syrup, yogurt, lemon zest and juice, vanilla, baking powder, baking soda, and salt until smooth.
Mix in almond flour and poppy seeds until well combined.
Divide batter into muffin tin and bake for 20-22 minutes until golden and a toothpick comes out clean.
Cool muffins for 10 minutes. Mix powdered sugar and lemon juice to make glaze, then drizzle over muffins before serving.
Notes
For best results, use fresh lemon zest and high-quality almond flour.
