Healthy Lemon Poppy Seed Muffins

Delicious and nutritious muffins infused with fresh lemon and poppy seeds, perfect for a healthy snack or breakfast.

Ingredients

Dried ingredients

  • 3 large eggs
  • 1/2 cup maple syrup or honey
  • 3/4 cup Greek yogurt (2% fat or higher)
  • Zest of 2 lemons lemon zest
  • 2 tbsp lemon juice
  • 1 tsp pure vanilla extract
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 3 1/2 cups almond flour
  • 2 tbsp poppy seeds

Other ingredients

  • as needed cooking spray (I use Misto)
  • 1/4 cup powdered sugar (erythritol)
  • 1 tbsp lemon juice or water (more if needed)

Instructions 

  • Preheat oven to 350°F (175°C). Line muffin tin with liners and spray with cooking spray.
  • Whisk eggs, maple syrup, yogurt, lemon zest and juice, vanilla, baking powder, baking soda, and salt until smooth.
  • Mix in almond flour and poppy seeds until well combined.
  • Divide batter into muffin tin and bake for 20-22 minutes until golden and a toothpick comes out clean.
  • Cool muffins for 10 minutes. Mix powdered sugar and lemon juice to make glaze, then drizzle over muffins before serving.

Notes

For best results, use fresh lemon zest and high-quality almond flour.
