A light and moist lemon blueberry cake with reduced sugar, perfect for a healthy treat.

Ingredients

Dry ingredients

  • 1 1/2 cups all-purpose flour (or whole wheat pastry flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet ingredients

  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/3 cup plain Greek yogurt
  • 1/4 cup olive oil or melted coconut oil
  • Zest of 2 lemons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup powdered sugar
  • 1–2 tablespoons lemon juice (for glaze)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare pan.
  • Mix dry ingredients in a bowl.
  • Whisk eggs, honey, yogurt, oil, lemon zest, lemon juice, and vanilla until smooth.
  • Combine wet and dry ingredients, then fold in blueberries.
  • Pour batter into pan, bake 30–35 minutes, then cool.
  • Mix powdered sugar with lemon juice and drizzle over cooled cake.

Notes

For a lighter option, use Greek yogurt and reduce sugar.
