Enjoy these wholesome homemade fig bars made with natural ingredients and a deliciously sweet fig filling.

Ingredients

Dried Fruits

  • 1 cup dried mission figs (roughly 6 oz)
  • 0.5 lemon juice of 1/2 lemon

Water

  • filtered water filtered water to soak (as needed)
  • 1.5 cups oat flour
  • 2 tbsp coconut sugar
  • 2 tsp baking powder
  • 0.5 tsp cinnamon
  • 0.25 cup creamy almond butter
  • 0.25 cup room temperature plant milk (e.g., light coconut milk, more as needed)
  • 1 tsp vanilla extract

Optional

  • orange juice optional orange juice (for blending instead of soaking water)

Instructions 

  • Soak figs in hot water for at least 1 hour, then strain, reserving soaking water.
  • Preheat oven to 350°F (175°C).
  • Blend soaked figs with lemon juice, adding soaking water gradually until spreadable. Optionally, blend with orange juice for sweetness.
  • Mix flour, coconut sugar, baking powder, and cinnamon. Add almond butter, plant milk, and vanilla; mix into a workable dough.
  • Roll dough into a rectangle, spread fig paste in center, fold over, and slice into 10 bars. Bake for 12-15 minutes until golden.

Notes

Ensure not to overbake to keep bars soft and chewy.
