Instructions
Preheat oven to 350°F (177°C) and line a baking sheet.
Pulse oats in a food processor until fine.
Mix processed oats with shredded coconut, peanut butter, and maple syrup to form a dough.
Form dough into balls, flatten into disks, and place on the baking sheet.
Bake for 12–13 minutes until edges are golden. Cool on sheet.
