Ingredients

Pasta

  • 8 ounces whole wheat linguine

Salmon

  • 1 pound salmon fillets (skin removed and cut into bite-sized chunks)

Oil

  • 1 tablespoon olive oil

Garlic

  • 3 cloves garlic, minced

Sun-dried tomatoes

  • 1/2 cup sun-dried tomatoes, chopped

Spinach

  • 3 cups fresh baby spinach

Vegetable broth

  • 1/2 cup low-sodium vegetable broth

Greek yogurt

  • 1/2 cup plain Greek yogurt

Parmesan cheese

  • 1/4 cup grated Parmesan cheese

Italian seasoning

  • 1 teaspoon dried Italian seasoning

Red pepper flakes

  • 1/2 teaspoon red pepper flakes

Salt and pepper

  • Salt and black pepper to taste

Instructions 

  • Cook pasta in salted water until al dente.
  • Season salmon with salt, pepper, and Italian seasoning, then sear until cooked through. Remove and set aside.
  • Sauté garlic and sun-dried tomatoes in olive oil for 1-2 minutes.
  • Whisk in vegetable broth and Greek yogurt, then add spinach until wilted.
  • Stir in Parmesan and red pepper flakes, then combine with pasta and salmon. Serve hot.

Notes

For extra flavor, garnish with fresh herbs or additional black pepper.
