Instructions
Heat oil in a skillet, sauté onion and garlic for 2-3 mins.
Add ground chicken and cook until no longer pink, about 3-4 mins.
Add tomatoes, peppers, corn, rice, and spices; sauté for 2-3 mins.
Pour in water, bring to a boil, then reduce heat, cover, and simmer for 15 mins.
Turn off heat, top with cheese, cover, and let sit for 10 mins. Garnish and serve.
Notes
Feel free to add fresh herbs or avocado for extra flavor.
