A flavorful and nutritious casserole combining chicken, rice, and vegetables with bold spices, perfect for a wholesome meal.

Ingredients

Rice

  • 1.5 cups rice

Protein

  • 1 lb ground chicken

Vegetables & Spices

  • 2-3 cloves garlic cloves (finely chopped)
  • 1 medium onion (diced)
  • 2 medium tomatoes (diced)
  • 1 red red bell pepper (diced)
  • 1 cup corn (fresh or frozen)
  • 3 cups water
  • 2 tsp cooking oil
  • salt salt
  • 1.5 tsp smoked paprika
  • 1.5 tsp chipotle chili powder
  • 0.5 tsp dried oregano
  • 1 tsp cumin powder
  • 0.5 tsp black pepper

Instructions 

  • Heat oil in a skillet, sauté onion and garlic for 2-3 mins.
  • Add ground chicken and cook until no longer pink, about 3-4 mins.
  • Add tomatoes, peppers, corn, rice, and spices; sauté for 2-3 mins.
  • Pour in water, bring to a boil, then reduce heat, cover, and simmer for 15 mins.
  • Turn off heat, top with cheese, cover, and let sit for 10 mins. Garnish and serve.

Notes

Feel free to add fresh herbs or avocado for extra flavor.
